Sweet-Potato-Lollipop

       Sweet Potato Lollipop is a quick and easy snack recipe for kids,Goes well as a party appetizer.This recipe is made by mixing Sweet potatoes with potatoes and other masalas,rolling into balls,coating with flours and deep frying in oil...



Prep Time:  20 mins
Cook time: 20 mins
Serves: 3

Ingredients:
  • Toothpick  6 - 7
  • Oil for deep frying
Ingredients for Balls:
  • 2 Sweet Potato, cooked
  • 2 Potato,cooked
  • 2 tsp Corn flour 
  • 2 tsp All purpose flour
  • 1 Green chilli ,finely chopped
  • 1/2 tsp Chilli powder
  • 1/2 tsp Black pepper powder
  • 1/4 tsp garam masala Powder
  • 1 tsp Grated ginger
  • Coriander leaves, chopped – 2 tbsp
  • Salt for taste
Ingredients For coating
  • Corn Flour
  • All purpose flour
  • Bread crumbs

Method:
Cook potato and sweet potato, peel and mash it well.Make sure there is no excess water.
Finely chop green chilli and coriander leaves.
Make a smooth paste with 2 tbsp purpose flour and required water. It should be like a batter. Not thin not too thick.
Take bread crumbs in a plate and keep it separately.
In a bowl, mix all the items given under"Ingredients for balls" 
Now make equal sized balls or cylindrical shape,then roll each ball in corn flour.


Then dip it in the all purpose flour paste.
Roll them in bread crumbs to coat evenly on all sides.then just roll it in your palm so excess bread crumbs fall off.Make sure its coated well.
Heat oil in a kadai and once the oil is hot, drop 2 or 3 at a time.

Cook in medium flame and drain in tissue paper once its cooked.Make sure to drop same shapes at a time for even cooking.Keep turning in between to ensure even browning

Then insert toothpick in each roll .... Sweet Potato Lollipop is ready to eat.....

Kadai Chicken

      Kadai Chicken....Making kadai chicken is really easy , its made by cooking chicken with Indian spices along with capsicum, it's taste delicious. Capsicum add  more flavor to the dish. Kadai chicken is semi-gravy type curry making it perfect side dish for Phulka / Naan / Roti / Rice. 


Prep Time: 5 mins
Marination Time:30 mins
Cook Time: 25- 30 mins
Ingredients:
  • 1 tbsp Oil                              
  • 2 each-Cardamom,cloves,Cinnamon
  • 1/2 tsp Fennel seeds
  • 1 Onion diced 
  • 1 green chilli 
  • 1 tsp ginger garlic paste
  • 2 Tomatoes ( make it to puree)
  • 1 tsp Chilli powder
  • 2 Capsicum diced
  • Coriander leaves
  • Salt to taste
For Marination:
  • 1/2 kg Chicken 
  • 1 tbsp Yoghurt,beaten
  • 1/4 tsp Turmeric powder
  • 1 tsp Ginger garlic paste
  • 1 tsp Chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Pepper powder
  • 1/2 tsp Garam masala powder
  • 1/2 tsp Salt
Method:
  • Fry the Capsicum in 1 tsp of oil for 2 mins and keep it aside.
  • Take the washed chicken in a bowl and add the items under "For Marination" and mix well.
  • Allow it to marinate for min 30 mins.
  • Heat oil in a thick bottomed kadai.
  • Add whole garam masala spices and add green chilli, onions and fry till it turns light brown.
  • Add ginger garlic paste and sauté for a min.
  • Add the tomato puree and chilli powder and fry till the raw smell goes.
  • Now add the marinated chicken pieces.
  • Mix it properly in medium flame, so that all the pieces are coated well in the masala.
  • Add 1 cup of water, cover and cook for 10-15 mins, in medium flame.
  • Stir in between.If required add some more water.Do not pour more otherwise the chicken will be overcooked.
  • Once the chicken is cooked, add fried Capsicum& salt.
  • Stir well and cook for another 5 mins in low flame.
Garnish with Coriander leaves.. Serve it hot with Rice/ Roti

Lemon and Sweet Idiyappam / Sevai

Sprinkle Coconut and sugar on the Idiyappam and serve....


Lemon Idiyappam
Cook time: 10 mins
Ingredients:
  • Idiyappam 
  • Lemon juice from 1 lemon
  • 1 Onion finely chopped 
  • 2 green chillies finely chopped
  • 1/2 tsp Mustard
  • 1/2 tsp Urad dal
  • 1 tsp Channa dal
  • 1 tsp Peanuts
  • Salt for taste
  • 1/4 tsp turmeric powder(optional)
  • Curry leaves
Method:
In a broad vessel, shred the idiyappam and mix salt in it. Keep it aside.
Heat oil in a kadai, add mustard seeds, urad dal, bengal gram,peanuts,curry leaves,green chilli and onion fry for a minute add turmeric powder and saute for few seconds.
Add  idiyappam in the kadai and mix well. Adjust salt and add lemon juice according to your taste.

Lemon Sevai is ready to serve.....

Ghee Rice

 This is one of the most simplest and easiest rice recipe.It's a aromatic dish that goes well with any Vegetarian or Non vegetarian Gravies.Here is the recipe of a quick and easy ghee rice,wherein the rice is cooked in ghee and whole spices...



Prep Time: 15 mins
Cook Time:15 mins
Serves:2
Ingredients:

  • 1 cup rice(200 gms)
  • 2 cup water
  • 1 tbsp Ginger garlic paste
  • 1/3 cup Coriander and mint leaves finely chopped
  • 1 bay leaf
  • 3 cardamons
  • 3 cloves
  • 2 inch cinnamon stick
  • 2 green chillies slit
  • 2 tbsp. ghee
  • Salt as required
  • Roasted Cashews for garnishing



Method:

  • Soak rice for at least 15 mins and drain the water.
  • In a pressure cooker,add  ghee , add in bay leaf,cloves, cinnamon stick and cardamons. Fry for a min.
  • Add ginger garlic paste,sliced green chillies and fry for a min.
  • Add the green leaves and fry for another minute.
  • Add rice and fry on medium low flame for about 3 minutes, until the rice gets coated with the masalas.Stir to prevent burning.
          
  • Pour water and salt. Allow the rice to boil,once the water is less and rice is semi cooked,as shown in the pic,close the lid.
          
  • After 1 whistle ,Keep it in low flame for 5 mins.Allow it to cool.
  • Once cooled immediately transfer to another big bowl.Garnish with roasted cashews.

Ghee rice is ready to serve.....
Goes well with any Vegetarian or Non vegetarian gravies...

Bread Paneer Rolls

 
          This is very easy and quick recipe to make.Bread paneer rolls are made by applying spiced paneer mixture on bread,then rolled and stir fried in tawa.This is a kid friendly,easy to make snack and they enjoy every crispy bite of the roll.

Prep time: 5 mins
Cook Time: 10 mins
Serves: 2

Ingredients:
For Paneer Mixture:

  • 100 gms Paneer 
  • 1/4 tsp Chilli powder
  • 1/4 tsp Pepper powder
  • 1/4 tsp Cumin powder
  • 1/4 tsp Garam masala powder(Optional)
  • 1/2 tsp Ginger paste/ grated
  • 1/2 onion finely chopped
  • 1 small green chilli finely chopped(seeds removed)
  • Coriander leaves finely chopped
  • 1 tbsp Milk
  • Salt for taste

For Rolling:

  • 5 Bread slices 
  • Melted butter
  • 1 tbsp Milk to sprinkle on bread for rolling

For Stir fry

  • 1 tbsp Melted Butter / Ghee /Oil

Method:

  • Take the bread slices and trim the edges.
  • Sprinkle 2 or 3 drops of milk on the bread and roll it to thin slices using the rolling pin.Keep it aside.
          

  • In a bowl, grate paneer.
  • Add all the ingredients given under " For Stuffing" except milk and mix well.
  • Now Add milk and make smooth dough that can be easily spreaded on the bread slices.
  • Check salt and add if required.
          
  • Now apply the paneer stuffing evenly on the bread slices and roll it.
  • Seal the edges with milk or water.Roll the stuffed bread slowly on the flat surface so that it gets sealed tightly.
  • Repeat the same for the remaining slices.
  • Heat the pan, add little butter /ghee/Oil ,place the bread rolls and within few seconds roll them to the other side otherwise it gets stuck in the pan.
  • Keep rolling them until all the sides turn golden brown.
  • Remove from flame.

Delicious Bread Paneer rolls are ready to eat.

Serve hot with tomato ketchup, or any dips of your choice.

Spicy Egg Masala

       Spicy Egg masala is a very simple recipe with egg. Most of the egg recipes are easy and can be quickly prepared.In this recipe, the boiled eggs are cooked in a spicy Indian masala. This can be served as a side dish for chapattis, pulao, white rice etc...


Prep Time: 5 mins
Cook Time : 10 mins
Serves :4

Ingredients:

  • 4 Eggs boiled
  • 1 Big Onion,finely chopped
  • 1 Green Chilli,slit
  • 1 tsp Ginger Garlic paste
  • 2 Tomatoes,finely chopped
  • 1 tsp Chilli pwd
  • 1 tsp Coriander pwd
  • 1/4 tsp Turmeric pwd
  • 1/2 tsp Curry powder or Garam masala pwd
  • 1/2 tsp Fennel seeds
  • 1 tbsp oil
  • Salt to taste
  • Coriander leaves

Method:

  • Boil eggs, remove the shell,Slightly make a slit on it. and keep it aside.
  • Heat oil in a kadai,add fennel seeds.
  • Add onions,green chilli and sauté till onion turns translucent.
  • Add ginger garlic paste.Sauté for 2 mins.
  • Add tomatoes and all masala powders and fry till the tomatoes become soft and mushy.
  • Drop the boiled eggs in the kadai.Add 1/4 cup water,stir well and cover it.
  • Allow to cook in medium low flame for 5 to 7 mins or till the required consistency.
  • Finally Garnish with Coriander leaves.

Serve hot with rice/roti...
