Mango Kulfi | Prepared in 5 Minutes | No Cook Method

Mango Kulfi.... This recipe does not require any cooking, just blend all ingredients and freeze it. Its very easy method and can be prepared in 5 minutes...


Prep Time: 5mins
Freezing Time: 5 hrs

Ingredients ( 1 cup- 250ml)
  • 1 cup Chopped mangoes (sweet and non fibre mangoes)
  • 150 ml sweetened condensed milk
  • 100 ml milk cream
  • 1 tbsp milk
  • 4 cardamom seeds
  • 5-6 Almonds
  • 1 tbsp Sugar (optional, add according to your taste)
  • 1 tsp crushed Pistachio
Method:
  • Crush almonds and cardamom seeds in a blender.
  • Add mango,milk, cream,condensed milk,sugar in the blender and blend it till smooth.
  • Keep the moulds or cups ready,put some crushed pista in it.
  • Pour the mango kulfi mixture in Kulfi moulds or popsicles or small cups.
  • Sprinkle some crushed nuts on it.
  • Insert tooth pick or ice sticks and keep in the freezer for minimum 5 hrs for the kulfi to set.
  • To remove the kufi from the moulds, place the moulds under running water for 2 - 3 seconds and gently remove the kulfi.         
  • If cup is used,after refrigerating once its set,keep it outside for 1 min and gently remove it from the cup.                                         
Serve kulfi as such or with  nuts and mangoes ......


Notes:
I added sugar as the sweetness of mango was little less.

Paneer Fingers | Paneer Recipes


Paneer Fingers is a crispy tasty vegetarian starter,it's a perfect appetizer for any parties.


Ingredients:
  • 200 gms - Homemade Paneer/ Store brought  
  • 1/2 cup Bread crumbs          
  • Oil for deep frying
      Batter for dipping:
  • 2 tbsp Wheat flour /  All purpose flour
  • 1 tbsp corn flour
  • 1 tsp chilli powder
  • 1/4 tsp turmeric powder
  • 1 tsp lemon juice
  • 1/2 tsp pepper powder
  • 1/2 tsp cumin powder
  • 1/4 tsp Garam masala (optional)
  • Salt to taste
  • 4-5 tbsp water
Method:
  • Cut paneer into rectangular shapes.
  • Mix wheat flour, corn flour, chilli powder,turmeric,salt,pepper,cumin,lemon juice and salt.
  • Add little water to make a thick batter,like idli batter.
  • Keep the paneer and bread crumbs ready. 
  • Take each paneer pieces,dip in the batter and roll it in breadcrumbs.Keep it aside.
  • Repeat the same for all paneer slices and keep it aside.
  • Heat the oil in kadai,once hot keep in medium flame.
  • Now drop 4 to 5 paneer fingers in oil, fry gently  till it turns golden brown.
  • Repeat the same with the remaining pieces.
Serve hot with your favourite ketchup.Crispy outside yummy inside...

Vegetable Manchurian Dry

Dry Vegetable manchurian without the sauce is easy and quick to prepare....It can be served as an appetizer / Snacks/ Starter....

Prep Time:10mins
Cook Time:20 mins
Serves : 4 -5
Ingredients:

  • All purpose flour/ maida -1/2 cup
  • Corn flour -2 tbsp
  • Cabbage, grated -1/2 cup
  • Carrot, grated -1/4 cup
  • Soya chunks - 5 - 6 bigger size,soaked and crushed in mixer jar
  • Ginger garlic paste - 1 tsp
  • Chilli Powder - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Black Pepper powder -1/2 tsp
  • Soya sauce -1 tsp
  • Salt to taste
  • Water -As needed
  • Coriander leaves - 1 tsp chopped
  • Oil to deep fry

Method:

  • Soak the soya chunks for 15 mins,squeeze the water and crush it in a mixer jar.
  • Grate carrot and cabbage in a vegetable grater.
  • Take all the ingredients in a bowl sprinkle water little by little and mix it.
  • The consistency should be as shown below. Make even sized balls out of it.        


  • Heat enough oil  and deep fry in hot oil. Cook in medium flame to ensure even cooking. Deep fry until dark golden colour.
  • Drain in paper towel, keep aside. 
  • Now the vegetable manchurian balls are ready.
  • Serve hot with your favourite Ketchup....

Indian Style Pasta Recipe

       This Pasta recipe is prepared by traditional Indian way with selected Indian spices and Capsicum. Easy to make , Kids love this recipe especially in their lunch box. This can also be prepared with variety of vegetables.


Prep Time: 10 mins
Cook time: 15 mins
Serves: 3

Ingredients:
Pasta - 150 - 200 gms(I used snails)
Capsicum - 1 cup
Onion - 1
Tomato - 1
Green chilli - 1
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Garam masala powder - 1/2 tsp
Chopped coriander leaves - 2 tblsp
Salt - As needed
Oil - 1 tbsp
Tomato Ketchup - 1 tbsp
Soya Sauce - 1 tbsp

Method:

  • Boil water and add the pasta. Cook as per the package instructions.I cooked for 10 mins.Dont overcook.
  • Drain the water and keep it aside
  • Cut the vegetables and keep it aside.
  • Heat a kadai with oil and add chopped onion,green chilli and fry until transparent. 
  • Add the Capsicum and fry for 2 minutes in medium flame. 
  • Add tomato, masala powders and salt and fry  it in high flame for 2 mins and in medium flame until tomatoes gets soft and oil separates.
  • Add the cooked pasta, stir well fora minute, sprinkle little water &cook in medium low flame for 2 mins.
         
Garnish with chopped coriander leaves.
Pasta is ready to eat....

Bread Paneer Rolls

 
          This is very easy and quick recipe to make.Bread paneer rolls are made by applying spiced paneer mixture on bread,then rolled and stir fried in tawa.This is a kid friendly,easy to make snack and they enjoy every crispy bite of the roll.

Prep time: 5 mins
Cook Time: 10 mins
Serves: 2

Ingredients:
For Paneer Mixture:

  • 100 gms Paneer 
  • 1/4 tsp Chilli powder
  • 1/4 tsp Pepper powder
  • 1/4 tsp Cumin powder
  • 1/4 tsp Garam masala powder(Optional)
  • 1/2 tsp Ginger paste/ grated
  • 1/2 onion finely chopped
  • 1 small green chilli finely chopped(seeds removed)
  • Coriander leaves finely chopped
  • 1 tbsp Milk
  • Salt for taste

For Rolling:

  • 5 Bread slices 
  • Melted butter
  • 1 tbsp Milk to sprinkle on bread for rolling

For Stir fry

  • 1 tbsp Melted Butter / Ghee /Oil

Method:

  • Take the bread slices and trim the edges.
  • Sprinkle 2 or 3 drops of milk on the bread and roll it to thin slices using the rolling pin.Keep it aside.
          

  • In a bowl, grate paneer.
  • Add all the ingredients given under " For Stuffing" except milk and mix well.
  • Now Add milk and make smooth dough that can be easily spreaded on the bread slices.
  • Check salt and add if required.
          
  • Now apply the paneer stuffing evenly on the bread slices and roll it.
  • Seal the edges with milk or water.Roll the stuffed bread slowly on the flat surface so that it gets sealed tightly.
  • Repeat the same for the remaining slices.
  • Heat the pan, add little butter /ghee/Oil ,place the bread rolls and within few seconds roll them to the other side otherwise it gets stuck in the pan.
  • Keep rolling them until all the sides turn golden brown.
  • Remove from flame.

Delicious Bread Paneer rolls are ready to eat.

Serve hot with tomato ketchup, or any dips of your choice.
