Brinjal Chutney | Sutta Kathirikai Chutney


Brinjal Chutney is a spicy chutney goes well with Idli ,Dosa....

Prep Time: 5 mins
Cook time: 10 mins

Ingredients:
  • 5 or 6 Brinjal, Medium size
  • 2 Green chillies
  • 1/2 Onion
  • 2 inch tamarind
  • 1/2 tsp Mustard
  • 1/2 tsp Urad dal
  • 1 tsp Channa dal
  • 2 pinch hing
  • 1 tbsp coriander leaves(optional)


Method:
Apply oil on the brinjal everywhere. Roast it in direct medium flame,rotate the brinjal now and then so it gets cooked evenly.     
Once the brinjal are roasted completely,it wil become very soft,it means its cooked.
Remove it from fire and allow it to cool.
Remove the skin,showing it under the running tap water(slowly).
Mash the brinjal to ensure that there is no insects in it.
In a pan fry mustard,urad dal,channa dal,hing and green chillies.
Grind them into one and two.Add onion,tamarind and grind it.
Now add the brinjal and coriander leaves and grind it to a paste.
Serve with Sesame oil and goes well with idly or dosa.

Green Brinjal fry

Its a simple and tasty dish that can be served as a side dish for rice or rotis.


Ingredients:
  • 250 gms Brinjal
  • 1 onion,finely chopped
  • 1/2 tsp mustard seeds
  • 1 tsp broken urad dal
  • 1/4 tsp turmeric powder
  • 1.5 tsp red chilli powder
  • 1 tsp coriander powder
  • A few curry leaves
  • Salt to taste

Method:

  • Chop brinjals into pieces (Small or big) as you wish and keep it in water till use.
  • Meanwhile, heat 1 tbsp oil in a pan. Add mustard seeds,once it splutters, add urad dal and curry leaves.
  • Add chopped onions and saute till they turn light brown.
  • Now add chopped brinjals along with salt, turmeric powder, red chilli powder and coriander powder.
  • Fry for 2 minutes. Then add half a cup water and mix well.
  • Cover and cook on medium low flame till brinjal turn soft and all the water dries up.
  • Remove from heat and serve brinjal fry with rice or rotis.

Brinjal Curry Recipe

Prep Time: 10 mins   Cook Time: 15 mins   Serves : 4

         Brinjal Curry is a simple delicious dish made by cutting brinjal into pieces and cooked with chopped onion,tomatoes along with coconut and spices.It is a semi dry recipe which goes well with rice and rotis...

Ingredients:
  • 5 - 6 Medium size Brinjal
  • 3 Tomatoes, chopped
  • 1 Onion finely chopped
  • Salt
  • Coriander leaves
To Grind:
  • Coconut - 1/2 cup 
  • Fennel seeds - 1 tsp
  • 3 - 4 Cashews
  • Chilli Powder - 2tsp
  • Coriander powder - 2 tsp
  • Turmeric - 1/2 tsp
      
To temper:
  • 2 Cinnamon stick
  • Curry leaves few
Method:
  • In a mixer put all the ingredients to grind and grind it to a thick fine paste,by adding very little water.
  • Wash and cut the brinjal to medium sizes.
  • In a pan add 2 tbsp oil and fry the Brinjal in the medium flame with little turmeric powder and salt.
  • Close the lid and cook in low flame until the brinjal is soft.Keep aside.
      
  • In the pan add 1 tbsp oil,add the items to temper.
  • Add in Onion and fry until it turns golden brown.
  • Add the tomatoes and fry till it becomes mushy.
     
  • Now add the ground masalas fry for few mins in medium flame and add 1 cup of water.
  • Allow it to boil,then add the fried brinjals.
     
  • Cook covered in low medium flame for 5 mins.
  • Garnish with Coriander leaves.

Serve hot with Rice / Roti

Stuffed Brinjal Gravy/ Ennai Kathirikai kulumbu without Tamarind

Prep Time : 15 mins  Cook Time : 20 mins Serves :3
  

Ingredients:

  • 10 small size Brinjal with stem
  • 3 - 4 Tomatoes, chopped
  • 1 Onion finely chopped
  • Salt
  • Coriander leaves
To Grind:
  • Coconut - 1/2 cup grated
  • Fennel seeds - 1 tsp
  • Khus khus / poppy seeds- 1/2 tsp or 3 Cashews
  • Chilli Powder - 2tsp
  • Coriander powder - 2 tsp
  • Turmeric - 1/2 tsp
  • Salt - 1 tsp
To temper:
  • 4 Cloves
  • 2 Cinnamon stick
  • Curry leaves few
          

Method:

  • In a mixer put all the ingredients to grind and grind it to a thick fine paste,by adding very little water.
  • Wash and slit cut the brinjal halfway into 4 as shown in the picture.Do not remove the stem.
         
  • Now stuff the ground masala in the brinjal.
           
  • In a pan add 2 tbsp oil and fry the Brinjal in the medium flame and close the lid and cook in low flame until the brinjal is soft.Keep aside.
          
  • In the pan add 1 tbsp oil,add the items to temper.
  •  Add in Onion and fry until it turns golden brown.
         

  • Add the tomatoes and fry till it becomes mushy.
  • now add the remaining ground masalas fry for few mins in medium flame and add 1 cup of water.
         
  • Allow it to boil,then add the fried brinjals.
  • Cook covered in low medium flame for 5 mins. If required add salt.
  • Garnish with Coriander leaves.



   Serve hot with Rotis or Rice....

Sutta Kathirikai Gothsu / Brinjal Gothsu

Prep Time : 10 mins    Cooking Time : 20 mins    Serves : 4

Goes well with rice & roti...
Ingredients:
  • 2 big Brinjal / Kathirikai
  • 1 big onion or 10 to 15 small onions finely chopped
  • 3 medium size Tomato finely chopped
  • 4 Green chillies finely chopped
  • 1 tsp Tamarind paste
  • Salt for taste
For tempering :
  • 1 tsp mustard
  • 1 tsp urad dhal
  • 2 tbsp Sesame oil
  • Curry leaves
                     

Method:

  1. Wash the brinjal,Roast it on medium open flame by applying oil on it. 
  2. Let it cool ,after 5 minutes peel the skin of the brinjal.    
  3. After peeling the skin, put it in a bowl of water and rinse the brinjal to remove the excess smoke smell and the remaining tiny burnt skins.
  4. Mash the brinjal to ensure that there is not insects in it.
  5. Now mash it nicely with your hands or cut it using knife or if you want a smooth paste you can blend it in mixie.
  6. Now in a pan add oil and put the temper items,then add onion green chillies.
  7. Fry till the onion turns golden brown colour and add the tomato and salt.
  8. Once the tomato gets mushy add the brinjal,tamarind paste and mix well.
  9. Add water and boil for 5 mins to bring it to Gothsu consistency.
  10. Garnish with Coriander leaves 
          

Serve hot with Idli / Dosa ,Rotis etc....
