Vegetable Kurma
Ingredients:
- Vegetables - 1 and 1/2 cups (any mixed vegetables)
- 1 medium size Onion
- 2 medium size Tomato
- 1 Green chilli
- 1 small piece Ginger
- 5 - 6 Garlic pods
- 1 tsp Chilli powder
- 1/2 tsp Coriander powder
- 1/4 tsp Curry powder (optional)
- Grated coconut - 1/4 cup (fresh or dry)
- Fennel seed - 1tsp
- Clove and Cinnamon - each 1
- Oil - 1 tbsp
Method:
- Boil the vegetables.I used carrot,beans,peas and potato.
- Now in a Tawa add oil ,Fennel seeds clove and Cinnamon.
- Fry onion ginger garlic till it changes to golden brown color.
- Add tomatoes along with the masala powders fry until the tomato gets mushy and raw smell goes off.
- Add the grated coconut and allow it to cool.
- Grind it into a smooth paste in a mixer .You can add little water while grinding.
- Now add the paste to the boiled vegetables and allow it to boil till a thick consistency or to your required consistency.
- Garnish it with coriander leaves
Serve it hot with Rotis, Rice.......
